Tzatziki

A favorite of hot summer days and very popular on both magnificent sides of the Aegean Sea, here is how we make tzatziki (Cacik in Turkish) in Turkey.

Ingredients:

  • 2 large cucumbers, chopped very finely
  • 1 clove garlic
  • 2 tsp salt
  • 3 cups plain yogurt
  • cold water (up to 3 cups)
  • Garnish
  • 1 tbsp olive oil
  • dried mint or fresh dill
  • red pepper flakes

Combine cucumber, garlic salt and yogurt in a large bowl, mix until everything is covered with yogurt, start whisking in the cold water till it comes to the consistency of your liking. This is a very personal choice, but I think cacik tastes the best when it has the consistency of heavy cream.

Garnish with olive oil, red pepper flakes and your choice of herbs, serve cold.
